Can It Be Gluten-Free started from a very real and personal need: wanting desserts that felt safe, thoughtful, and actually exciting to eat. After years of navigating chronic health conditions including EoE, MCAS, VCD, and ME/CFS, I know firsthand how exhausting and isolating food restrictions can feel. Finding treats that were both safe and genuinely enjoyable often felt impossible.

What began as a necessity quickly turned into a passion. Every recipe I create is made with intention, from carefully selected ingredients to the way each batch is prepared. My goal is simple: to create desserts that people with food allergies and dietary restrictions can feel excited about again — treats that don’t feel like an afterthought or compromise.

This business means so much more to me than cookies. It’s about creating comfort, inclusion, and moments of normalcy for people who often have to think twice about every bite they take.
